Description

A delightful pie inspired by the popular Girl Scout cookie, combining toasted coconut, chocolate, and gooey caramel for a rich, indulgent experience.


Ingredients

  • 1 1/2 cups all-purpose flour
  • 1/2 cup powdered sugar
  • 1/4 teaspoon salt
  • 3/4 cup cold unsalted butter, cut into cubes
  • 1 egg yolk
  • 2 tablespoons cold water
  • 1 cup granulated sugar
  • 1/2 cup heavy cream
  • 1/4 cup unsalted butter
  • 1 teaspoon vanilla extract
  • 1 1/2 cups sweetened shredded coconut
  • 4 ounces milk chocolate, melted


Instructions

  1. Preheat oven to 350°F (175°C).
  2. Grease a 9-inch pie plate.
  3. Whisk together flour, powdered sugar, and salt in a large bowl.
  4. Cut in cold butter until mixture resembles coarse crumbs.
  5. Whisk together egg yolk and cold water in a small bowl.
  6. Add to flour mixture and mix until dough just comes together.
  7. Press dough evenly into the bottom and up the sides of the prepared pie plate.
  8. Prick the bottom of the crust with a fork.
  9. Bake for 15-20 minutes, or until lightly golden.
  10. Let cool completely on a wire rack.
  11. Combine granulated sugar and 1/4 cup water in a medium saucepan.
  12. Heat over medium heat, stirring until sugar dissolves.
  13. Boil without stirring until the syrup turns a deep amber color.
  14. Carefully whisk in heavy cream and butter.
  15. Stir until smooth.
  16. Remove from heat and stir in vanilla extract.
  17. Pour caramel filling into the cooled pie crust.
  18. Spread the shredded coconut on a baking sheet and toast in the preheated oven for 5-7 minutes, or until golden brown.
  19. Sprinkle toasted coconut over the caramel filling.
  20. Drizzle melted milk chocolate over the coconut.
  21. Chill the pie for at least 2 hours before serving.

Notes

Use cold ingredients for a flaky crust. Do not rush the caramel and watch the coconut while toasting.
