Description

A delicious and healthy recipe for mini peppers stuffed with feta and spinach.


Ingredients

  • 12 mini sweet peppers
  • 1 cup fresh spinach, chopped
  • 1/2 cup feta cheese, crumbled
  • 1/4 cup cream cheese, softened
  • 1 clove garlic, minced
  • 1 tablespoon olive oil
  • Salt and pepper to taste

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. Cut the tops off the mini peppers and remove the seeds.
  3. In a bowl, mix together the chopped spinach, feta cheese, cream cheese, garlic, olive oil, salt, and pepper.
  4. Stuff each mini pepper with the spinach and feta mixture.
  5. Place the stuffed peppers on a baking sheet.
  6. Bake for 20-25 minutes, or until the peppers are tender.
  7. Serve warm and enjoy!
