- For the dressing:
- ΒΌ cup soy sauce
- 2 tbsp sesame oil
- 1 tbsp rice vinegar
- 1 tbsp ginger (grated)
- 1 tbsp honey or maple syrup
- 1 clove garlic (minced)
Instructions
- Cook the noodles according to package instructions, then drain and rinse under cold water.
- Combine in a large bowl the cooked noodles, carrots, bell pepper, cucumber, edamame, and green onions.
- Whisk together the ingredients for the dressing in a small bowl until well combined.
- Pour the dressing over the noodle mixture and toss to coat evenly.
- Garnish with sesame seeds.
- Serve immediately or refrigerate for meal prep.
