Ingredients

  • 1 cup shredded carrots
  • 1 bell pepper (sliced)
  • 1 cucumber (sliced)
  • 1 cup edamame (cooked and shelled)
  • 2 green onions (sliced)
  • Sesame seeds for garnish
  • For the dressing:
  • ΒΌ cup soy sauce
  • 2 tbsp sesame oil
  • 1 tbsp rice vinegar
  • 1 tbsp ginger (grated)
  • 1 tbsp honey or maple syrup
  • 1 clove garlic (minced)


Instructions

  1. Cook the noodles according to package instructions, then drain and rinse under cold water.
  2. Combine in a large bowl the cooked noodles, carrots, bell pepper, cucumber, edamame, and green onions.
  3. Whisk together the ingredients for the dressing in a small bowl until well combined.
  4. Pour the dressing over the noodle mixture and toss to coat evenly.
  5. Garnish with sesame seeds.
  6. Serve immediately or refrigerate for meal prep.
