A delightful twist on classic lasagna infused with creamy ricotta, vibrant spinach, and rich marinara sauce, perfect for nourishing meals.

- 9 lasagna noodles
- 2 cups ricotta cheese
- 2 cups spinach, chopped (or frozen spinach, thawed and drained)
- 1 cup mozzarella cheese, shredded
- 1 cup parmesan cheese, grated
- 1 jar (24 oz) marinara sauce
- 1 egg
- 1/2 teaspoon garlic powder
- 1/2 teaspoon onion powder
- Salt and pepper to taste
- Fresh basil or parsley for garnish
Instructions
- Preheat your oven to 375°F (190°C).
- Cook the lasagna noodles according to package instructions; drain and set aside.
- In a bowl, combine ricotta cheese, chopped spinach, egg, garlic powder, onion powder, salt, and pepper. Mix well.
- In a baking dish, spread 1/3 of the marinara sauce on the bottom.
- Layer 3 lasagna noodles over the sauce, then spread half of the ricotta mixture on top.
- Sprinkle with mozzarella and parmesan cheese.
- Repeat the layers with another 1/3 of the marinara sauce, 3 noodles, remaining ricotta mixture, and more mozzarella.
- Top with the last 3 noodles, remaining marinara sauce, and the rest of the mozzarella and parmesan cheese.
- Cover with aluminum foil and bake for 30 minutes.
- Remove the foil and bake for an additional 15-20 minutes until the cheese is bubbly and golden.
- Let cool for a few minutes before slicing. Garnish with fresh basil or parsley before serving.
Notes
Allow the lasagna to rest for a few minutes after baking to help hold the layers together when slicing.
