Description

A delightful twist on classic lasagna infused with creamy ricotta, vibrant spinach, and rich marinara sauce, perfect for nourishing meals.


Ingredients

  • 9 lasagna noodles
  • 2 cups ricotta cheese
  • 2 cups spinach, chopped (or frozen spinach, thawed and drained)
  • 1 cup mozzarella cheese, shredded
  • 1 cup parmesan cheese, grated
  • 1 jar (24 oz) marinara sauce
  • 1 egg
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon onion powder
  • Salt and pepper to taste
  • Fresh basil or parsley for garnish


Instructions

  1. Preheat your oven to 375°F (190°C).
  2. Cook the lasagna noodles according to package instructions; drain and set aside.
  3. In a bowl, combine ricotta cheese, chopped spinach, egg, garlic powder, onion powder, salt, and pepper. Mix well.
  4. In a baking dish, spread 1/3 of the marinara sauce on the bottom.
  5. Layer 3 lasagna noodles over the sauce, then spread half of the ricotta mixture on top.
  6. Sprinkle with mozzarella and parmesan cheese.
  7. Repeat the layers with another 1/3 of the marinara sauce, 3 noodles, remaining ricotta mixture, and more mozzarella.
  8. Top with the last 3 noodles, remaining marinara sauce, and the rest of the mozzarella and parmesan cheese.
  9. Cover with aluminum foil and bake for 30 minutes.
  10. Remove the foil and bake for an additional 15-20 minutes until the cheese is bubbly and golden.
  11. Let cool for a few minutes before slicing. Garnish with fresh basil or parsley before serving.

Notes

Allow the lasagna to rest for a few minutes after baking to help hold the layers together when slicing.
