Description

A refreshing and vibrant Persian salad made with cucumbers, tomatoes, and herbs.


Ingredients

  • 2 cups diced cucumbers
  • 2 cups diced tomatoes
  • 1/2 cup finely chopped red onion
  • 1/4 cup chopped fresh parsley
  • 1/4 cup chopped fresh mint
  • 1/4 cup olive oil
  • 2 tablespoons fresh lemon juice
  • Salt and pepper to taste


Instructions

  1. In a large bowl, combine the diced cucumbers, tomatoes, and red onion.
  2. Add the chopped parsley and mint to the bowl.
  3. In a small bowl, whisk together the olive oil, lemon juice, salt, and pepper.
  4. Pour the dressing over the salad and toss gently to combine.
  5. Let the salad sit for about 10 minutes to allow the flavors to meld.
  6. Serve chilled or at room temperature.
