A simple and delicious recipe for shrimp and broccoli foil packs that makes for a quick weeknight dinner.

- 1 pound shrimp, peeled and deveined
- 2 cups broccoli florets
- 2 tablespoons olive oil
- 2 cloves garlic, minced
- 1 teaspoon lemon juice
- Salt and pepper to taste
- 1 teaspoon paprika (optional)
Instructions
- Preheat the oven to 400°F (200°C).
- In a large bowl, combine shrimp, broccoli, olive oil, garlic, lemon juice, salt, pepper, and paprika.
- Lay out large pieces of aluminum foil and divide the shrimp and broccoli mixture evenly among them.
- Fold the foil packets tightly to seal them.
- Place the foil packs on a baking sheet and bake for 15-20 minutes, or until the shrimp are cooked through and the broccoli is tender.
- Carefully open the foil packs and serve immediately.
Notes
- Feel free to add other vegetables like bell peppers or carrots.
- For a spicier kick, add red pepper flakes.
- These foil packs can also be cooked on a grill.
