Description

A delicious and easy-to-make shrimp burrito recipe that is perfect for any meal.


Ingredients

  • 1 lb shrimp, peeled and deveined
  • 1 cup cooked rice
  • 1 cup black beans, drained and rinsed
  • 1 cup corn
  • 1 cup salsa
  • 1 cup shredded cheese
  • 4 large flour tortillas
  • 1 tablespoon olive oil
  • 1 teaspoon cumin
  • 1 teaspoon chili powder
  • Salt and pepper to taste

Instructions

  1. In a skillet, heat olive oil over medium heat.
  2. Add shrimp, cumin, chili powder, salt, and pepper. Cook until shrimp are pink and cooked through, about 5 minutes.
  3. In a large bowl, combine cooked rice, black beans, corn, and salsa.
  4. Add the cooked shrimp to the rice mixture and stir to combine.
  5. Place a portion of the shrimp mixture in the center of each tortilla.
  6. Top with shredded cheese.
  7. Fold the sides of the tortilla over the filling and roll it up tightly.
  8. Serve immediately or grill the burritos for a crispy finish.
