- 12 ounces cooked shrimp, peeled, deveined, tail removed
- ½ cup fresh lime juice
- 2 Roma tomatoes, diced
- 1 medium red onion, diced
- 2 medium jalapeño peppers, seeded and diced
- ¼ cup cilantro, chopped
- 2 green onions, diced
- ¼ teaspoon kosher salt
Instructions
- Chop the cooked shrimp into bite-sized pieces and place them in a mixing bowl.
- Pour fresh lime juice over the shrimp and toss gently to coat. Let it marinate for about 10 minutes.
- Add diced tomatoes, red onion, jalapeños, cilantro, green onions, and kosher salt to the bowl. Mix well until combined.
- Cover the bowl with plastic wrap and refrigerate for 30 minutes to an hour to let flavors meld.
- Serve chilled with crispy tortilla chips or in lettuce cups.
