Description
A delicious and cheesy shrimp quesadilla that is easy to make and perfect for any meal.
Ingredients

- 1 lb shrimp, peeled and deveined
- 1 cup shredded cheese (cheddar or Monterey Jack)
- 4 large flour tortillas
- 1 tablespoon olive oil
- 1 teaspoon garlic powder
- 1 teaspoon cumin
- Salt and pepper to taste
- Fresh cilantro, chopped (for garnish)
Instructions
- In a bowl, season the shrimp with garlic powder, cumin, salt, and pepper.
- Heat olive oil in a skillet over medium heat and cook the shrimp until pink and cooked through, about 3-4 minutes.
- Remove the shrimp from the skillet and set aside.
- In the same skillet, place one tortilla and sprinkle half of the cheese on one half of the tortilla.
- Add a portion of the cooked shrimp on top of the cheese.
- Fold the tortilla over and cook until the cheese is melted and the tortilla is golden brown, about 2-3 minutes per side.
- Repeat with the remaining tortillas and ingredients.
- Slice the quesadillas and garnish with fresh cilantro before serving.

- Feel free to add other ingredients like bell peppers or onions for extra flavor.
