A delicious and hearty morning treat perfect for breakfast or brunch.


Ingredients

  • 250g mixed dried fruit
  • 100g unsalted butter, softened
  • 150g brown sugar
  • 2 large eggs
  • 200g self-raising flour
  • 1 tsp ground cinnamon
  • 1 tsp ground nutmeg
  • 1 tsp baking powder
  • 100ml milk
  • 100g marzipan, for topping

Instructions

  1. Preheat your oven to 180°C (350°F).
  2. In a bowl, mix the dried fruit with the softened butter and brown sugar until well combined.
  3. Add the eggs one at a time, mixing well after each addition.
  4. In another bowl, sift together the flour, cinnamon, nutmeg, and baking powder.
  5. Gradually add the dry ingredients to the wet mixture, alternating with the milk, until fully combined.
  6. Pour the batter into a greased loaf tin and smooth the top.
  7. Bake for 45-50 minutes or until a skewer inserted into the center comes out clean.
  8. Allow to cool slightly before removing from the tin.
  9. Once cooled, roll out the marzipan and place it on top of the loaf, then slice and serve.

Notes

  • For a richer flavor, you can soak the dried fruit in tea or rum overnight.
  • This loaf can be stored in an airtight container for up to a week.
