- 250g mixed dried fruit
- 100g unsalted butter, softened
- 150g brown sugar
- 2 large eggs
- 200g self-raising flour
- 1 tsp ground cinnamon
- 1 tsp ground nutmeg
- 1 tsp baking powder
- 100ml milk
- 100g marzipan, for topping
Instructions
- Preheat your oven to 180°C (350°F).
- In a bowl, mix the dried fruit with the softened butter and brown sugar until well combined.
- Add the eggs one at a time, mixing well after each addition.
- In another bowl, sift together the flour, cinnamon, nutmeg, and baking powder.
- Gradually add the dry ingredients to the wet mixture, alternating with the milk, until fully combined.
- Pour the batter into a greased loaf tin and smooth the top.
- Bake for 45-50 minutes or until a skewer inserted into the center comes out clean.
- Allow to cool slightly before removing from the tin.
- Once cooled, roll out the marzipan and place it on top of the loaf, then slice and serve.
Notes
- For a richer flavor, you can soak the dried fruit in tea or rum overnight.
- This loaf can be stored in an airtight container for up to a week.
