Ingredients

  • 1 cup quinoa, rinsed
  • 1 medium onion, chopped
  • 2 cloves garlic, minced
  • 1 can (14.5 oz) diced tomatoes
  • 4 cups chicken broth
  • 1 cup carrots, diced
  • 1 cup celery, diced
  • 1 tsp dried oregano
  • 1 tsp cumin
  • Salt and pepper to taste
  • Fresh parsley for garnish

Instructions

  1. In a large pot, brown the ground turkey over medium heat until fully cooked.
  2. Add the chopped onion and minced garlic, cooking until the onion is translucent.
  3. Stir in the diced tomatoes, chicken broth, carrots, celery, quinoa, oregano, and cumin.
  4. Bring the mixture to a boil, then reduce heat and let it simmer for about 20 minutes, or until the quinoa is cooked and the vegetables are tender.
  5. Season with salt and pepper to taste.
  6. Serve hot, garnished with fresh parsley.
