A flavorful and easy-to-make Cajun jambalaya featuring chicken, sausage, and shrimp, perfect for spring.
Ingredients

- 1 pound chicken breast, diced
- 1 pound smoked sausage, sliced
- 1 pound shrimp, peeled and deveined
- 1 onion, chopped
- 1 bell pepper, chopped
- 2 celery stalks, chopped
- 4 cloves garlic, minced
- 1 can (14.5 oz) diced tomatoes
- 2 cups chicken broth
- 2 cups long-grain rice
- 2 tablespoons Cajun seasoning
- Salt and pepper to taste
- Green onions, for garnish
Instructions
- In a slow cooker, combine the chicken, sausage, onion, bell pepper, celery, garlic, diced tomatoes, chicken broth, rice, and Cajun seasoning.
- Stir well to combine all ingredients.
- Cover and cook on low for 6-8 hours or on high for 3-4 hours.
- In the last 30 minutes of cooking, add the shrimp and stir to combine.
- Once cooked, season with salt and pepper to taste.
- Garnish with green onions before serving.
