Description

A flavorful and easy-to-make Cajun jambalaya featuring chicken, sausage, and shrimp, perfect for spring.


Ingredients

Scale
  • 1 pound chicken breast, diced
  • 1 pound smoked sausage, sliced
  • 1 pound shrimp, peeled and deveined
  • 1 onion, chopped
  • 1 bell pepper, chopped
  • 2 celery stalks, chopped
  • 4 cloves garlic, minced
  • 1 can (14.5 oz) diced tomatoes
  • 2 cups chicken broth
  • 2 cups long-grain rice
  • 2 tablespoons Cajun seasoning
  • Salt and pepper to taste
  • Green onions, for garnish

Instructions

  1. In a slow cooker, combine the chicken, sausage, onion, bell pepper, celery, garlic, diced tomatoes, chicken broth, rice, and Cajun seasoning.
  2. Stir well to combine all ingredients.
  3. Cover and cook on low for 6-8 hours or on high for 3-4 hours.
  4. In the last 30 minutes of cooking, add the shrimp and stir to combine.
  5. Once cooked, season with salt and pepper to taste.
  6. Garnish with green onions before serving.
