A hearty and flavorful stew made with tender corned beef and fresh cabbage, perfect for a comforting meal.
Ingredients

- 2 pounds corned beef brisket
- 1 medium onion, chopped
- 4 cloves garlic, minced
- 4 medium carrots, sliced
- 4 medium potatoes, diced
- 1 small head of cabbage, chopped
- 4 cups beef broth
- 1 tablespoon mustard seeds
- 1 teaspoon black peppercorns
- Salt to taste
Instructions
- Place the corned beef brisket in the slow cooker.
- Add the chopped onion, minced garlic, sliced carrots, and diced potatoes on top of the beef.
- Pour in the beef broth and add the mustard seeds and black peppercorns.
- Cover and cook on low for 8-10 hours or until the beef is tender.
- In the last hour of cooking, add the chopped cabbage to the slow cooker.
- Once done, remove the beef, slice it, and serve with the vegetables and broth.

Notes
- For extra flavor, you can add a bay leaf while cooking.
- Leftovers can be stored in the refrigerator for up to 3 days.
- This stew can be frozen for up to 2 months.
