Ingredients

- 3–4 pounds corned beef brisket
- 1 onion, quartered
- 4 cloves garlic, minced
- 4 carrots, cut into chunks
- 4 potatoes, quartered
- 2 cups beef broth
- 1 tablespoon mustard seeds
- 1 tablespoon black peppercorns
- 2 bay leaves
- Salt to taste
Instructions
- Place the corned beef brisket in the slow cooker.
- Add the quartered onion, minced garlic, carrots, and potatoes around the brisket.
- Pour the beef broth over the meat and vegetables.
- Sprinkle the mustard seeds, black peppercorns, and bay leaves on top.
- Cover and cook on low for 8-10 hours or until the meat is tender.
- Once cooked, remove the brisket and let it rest for a few minutes before slicing.
- Serve with the vegetables and broth.
Notes
- For extra flavor, you can add a splash of beer to the broth.
- Leftovers can be stored in the refrigerator for up to 3 days.
- This dish pairs well with mustard or horseradish sauce.
