Description

Ingredients

  • 34 pounds corned beef brisket
  • 1 onion, quartered
  • 4 cloves garlic, minced
  • 4 carrots, cut into chunks
  • 4 potatoes, quartered
  • 2 cups beef broth
  • 1 tablespoon mustard seeds
  • 1 tablespoon black peppercorns
  • 2 bay leaves
  • Salt to taste

Instructions

  1. Place the corned beef brisket in the slow cooker.
  2. Add the quartered onion, minced garlic, carrots, and potatoes around the brisket.
  3. Pour the beef broth over the meat and vegetables.
  4. Sprinkle the mustard seeds, black peppercorns, and bay leaves on top.
  5. Cover and cook on low for 8-10 hours or until the meat is tender.
  6. Once cooked, remove the brisket and let it rest for a few minutes before slicing.
  7. Serve with the vegetables and broth.

Notes

  • For extra flavor, you can add a splash of beer to the broth.
  • Leftovers can be stored in the refrigerator for up to 3 days.
