Description

A hearty and flavorful casserole made in a slow cooker, perfect for busy days.


Ingredients

  • 1 lb ground beef
  • 1 can (15 oz) black beans, drained and rinsed
  • 1 can (15 oz) corn, drained
  • 1 can (10 oz) diced tomatoes with green chilies
  • 1 packet taco seasoning
  • 2 cups shredded cheddar cheese
  • 1 cup diced onion
  • 1 cup diced bell pepper
  • 1 cup beef broth
  • 4 cups frozen tater tots

Instructions

  1. In a skillet, brown the ground beef over medium heat until fully cooked. Drain excess fat.
  2. In the slow cooker, combine the cooked beef, black beans, corn, diced tomatoes, taco seasoning, onion, bell pepper, and beef broth.
  3. Stir well to combine all ingredients.
  4. Top the mixture with frozen tater tots and sprinkle with cheddar cheese.
  5. Cover and cook on low for 6-8 hours or on high for 3-4 hours.
  6. Once cooked, serve hot and enjoy!

Notes

  • Feel free to add other vegetables like zucchini or mushrooms for extra nutrition.
  • For a spicier version, add jalapeños or use spicy taco seasoning.
