Ingredients

  • 2 lbs beef chuck roast
  • 4 medium potatoes, diced
  • 1/2 cup unsalted butter
  • 6 cloves garlic, minced
  • 1 cup beef broth
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 teaspoon dried thyme
  • 1 teaspoon dried rosemary

Instructions

  1. Place the diced potatoes in the bottom of the slow cooker.
  2. Season the beef chuck roast with salt and pepper, then place it on top of the potatoes.
  3. In a small saucepan, melt the butter over medium heat and add the minced garlic, cooking until fragrant.
  4. Pour the garlic butter over the beef and potatoes.
  5. Add the beef broth, thyme, and rosemary to the slow cooker.
  6. Cover and cook on low for 8 hours or high for 4 hours, until the beef is tender.
  7. Shred the beef with two forks and mix it with the potatoes and sauce before serving.
