- 2 lbs beef chuck roast
- 4 medium potatoes, diced
- 1/2 cup unsalted butter
- 6 cloves garlic, minced
- 1 cup beef broth
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1 teaspoon dried thyme
- 1 teaspoon dried rosemary
Instructions
- Place the diced potatoes in the bottom of the slow cooker.
- Season the beef chuck roast with salt and pepper, then place it on top of the potatoes.
- In a small saucepan, melt the butter over medium heat and add the minced garlic, cooking until fragrant.
- Pour the garlic butter over the beef and potatoes.
- Add the beef broth, thyme, and rosemary to the slow cooker.
- Cover and cook on low for 8 hours or high for 4 hours, until the beef is tender.
- Shred the beef with two forks and mix it with the potatoes and sauce before serving.
