A comforting and nutritious dish combining tender chicken thighs, zesty lemon, and aromatic herbs cooked to perfection in a slow cooker.


Ingredients

  • 4 boneless, skinless chicken thighs
  • 1 cup long-grain rice
  • 2 cups chicken broth
  • 1 lemon, juiced and zested
  • 4 cloves garlic, minced
  • 1 tsp dried thyme
  • 1 tsp dried rosemary
  • Salt and pepper, to taste
  • Fresh parsley, for garnish

Instructions

  1. In the slow cooker, combine rice, chicken broth, lemon juice, lemon zest, garlic, thyme, rosemary, salt, and pepper.
  2. Place the chicken thighs on top of the rice mixture.
  3. Cover and cook on low for 6-7 hours or high for 3-4 hours, until the chicken is cooked through and the rice is tender.
  4. Fluff the rice with a fork and serve the chicken over the rice, garnished with fresh parsley.

Notes

For added depth of flavor, consider searing the chicken thighs before adding them to the slow cooker.
