A delicious and easy recipe for slow cooker tomato basil chicken breast, perfect for a spring dinner.

- 4 boneless, skinless chicken breasts
- 1 can (14.5 oz) diced tomatoes
- 1 cup fresh basil leaves, chopped
- 1 onion, diced
- 3 cloves garlic, minced
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1/2 cup heavy cream
Instructions
- Place the chicken breasts in the slow cooker.
- Add the diced tomatoes, onion, garlic, salt, and pepper on top of the chicken.
- Cover and cook on low for 6-8 hours or high for 3-4 hours.
- About 30 minutes before serving, stir in the heavy cream and chopped basil.
- Serve warm over rice or pasta.

- For a lighter version, you can substitute the heavy cream with coconut milk.
