Ingredients

Scale
  • 2 large cucumbers
  • 1 teaspoon salt
  • 2 tablespoons rice vinegar
  • 1 tablespoon soy sauce
  • 1 teaspoon sesame oil
  • 1 tablespoon sugar
  • 2 cloves garlic, minced
  • 1 tablespoon sesame seeds
  • 2 green onions, chopped


Instructions

  1. Wash the cucumbers and cut them into halves or quarters.
  2. Smack the cucumbers with a rolling pin or the flat side of a knife to break them up slightly.
  3. Sprinkle salt over the cucumbers and let them sit for about 10 minutes to draw out excess water.
  4. In a bowl, mix together rice vinegar, soy sauce, sesame oil, sugar, and minced garlic.
  5. Drain the cucumbers and add them to the dressing mixture.
  6. Toss well to combine and let it marinate for at least 15 minutes.
  7. Before serving, sprinkle with sesame seeds and chopped green onions.
