Ingredients

- 2 large cucumbers
- 1 teaspoon salt
- 2 tablespoons rice vinegar
- 1 tablespoon soy sauce
- 1 teaspoon sesame oil
- 1 tablespoon sugar
- 2 cloves garlic, minced
- 1 tablespoon sesame seeds
- 2 green onions, chopped
Instructions
- Wash the cucumbers and cut them into halves or quarters.
- Smack the cucumbers with a rolling pin or the flat side of a knife to break them up slightly.
- Sprinkle salt over the cucumbers and let them sit for about 10 minutes to draw out excess water.
- In a bowl, mix together rice vinegar, soy sauce, sesame oil, sugar, and minced garlic.
- Drain the cucumbers and add them to the dressing mixture.
- Toss well to combine and let it marinate for at least 15 minutes.
- Before serving, sprinkle with sesame seeds and chopped green onions.
Notes
- For extra flavor, add chili flakes or fresh herbs.
- This salad can be made a few hours in advance for better flavor.
