- 2 large flour tortillas
- 1 cup shredded cheddar cheese
- 1 cup cooked ground beef
- 1/2 cup diced onions
- 1/2 cup diced tomatoes
- 1/4 cup sliced jalapeños
- 1 tablespoon taco seasoning
- 2 tablespoons olive oil
Instructions
- In a skillet, heat 1 tablespoon of olive oil over medium heat.
- Add the diced onions and cook until translucent.
- Stir in the cooked ground beef, taco seasoning, diced tomatoes, and jalapeños. Cook for another 2-3 minutes.
- Remove the mixture from the skillet and set aside.
- In the same skillet, add another tablespoon of olive oil.
- Place one tortilla in the skillet and sprinkle half of the cheddar cheese on top.
- Add the beef mixture over the cheese, then top with the remaining cheese and the second tortilla.
- Cook for 3-4 minutes on each side until golden brown and the cheese is melted.
- Remove from heat, slice into wedges, and serve hot.
