Ingredients

  • 2 large flour tortillas
  • 1 cup shredded cheddar cheese
  • 1 cup cooked ground beef
  • 1/2 cup diced onions
  • 1/2 cup diced tomatoes
  • 1/4 cup sliced jalapeños
  • 1 tablespoon taco seasoning
  • 2 tablespoons olive oil

Instructions

  1. In a skillet, heat 1 tablespoon of olive oil over medium heat.
  2. Add the diced onions and cook until translucent.
  3. Stir in the cooked ground beef, taco seasoning, diced tomatoes, and jalapeños. Cook for another 2-3 minutes.
  4. Remove the mixture from the skillet and set aside.
  5. In the same skillet, add another tablespoon of olive oil.
  6. Place one tortilla in the skillet and sprinkle half of the cheddar cheese on top.
  7. Add the beef mixture over the cheese, then top with the remaining cheese and the second tortilla.
  8. Cook for 3-4 minutes on each side until golden brown and the cheese is melted.
  9. Remove from heat, slice into wedges, and serve hot.
