Description
A refreshing and healthy poke bowl featuring smoked tofu, perfect for spring.
Ingredients

- 1 cup cooked brown rice
- 200g smoked tofu, cubed
- 1 cup cucumber, diced
- 1 cup radishes, sliced
- 1 avocado, sliced
- 2 green onions, chopped
- 2 tablespoons soy sauce
- 1 tablespoon sesame oil
- 1 tablespoon rice vinegar
- 1 tablespoon sesame seeds
Instructions
- Cook the brown rice according to package instructions and let it cool.
- In a bowl, mix the soy sauce, sesame oil, and rice vinegar.
- Add the cubed smoked tofu to the sauce and let it marinate for 10 minutes.
- Prepare the vegetables: dice the cucumber, slice the radishes, and avocado, and chop the green onions.
- In a serving bowl, layer the brown rice, marinated tofu, cucumber, radishes, avocado, and green onions.
- Sprinkle sesame seeds on top before serving.
