These S’mores Ice Cream Bars are a frozen twist on the classic summer campfire treat—layered with buttery graham crust, rich chocolate ice cream, and a pillowy marshmallow topping.

- 2 cups graham cracker crumbs
- 1/2 cup salted butter, melted
- 2 tbsp brown sugar
- 1.5 quarts chocolate ice cream (softened)
- 7 oz marshmallow fluff
- 8 oz cream cheese, softened
- 2 cups whipped topping
- 1 cup mini marshmallows
Instructions
- Line a 9×13” pan with parchment. Mix graham crumbs, melted butter, and sugar. Press into pan. Freeze 10 min.
- Spread softened chocolate ice cream over crust. Freeze 2 hours until firm.
- Beat marshmallow fluff with cream cheese. Fold in whipped topping. Spread over ice cream. Top with mini marshmallows.
- Toast marshmallows with a kitchen torch or broil briefly. Freeze 4 hours or overnight.
- Let bars sit 5–10 min before slicing. Serve chilled.
