S’mores Ice Cream Bars

Description

These S’mores Ice Cream Bars are a frozen twist on the classic summer campfire treat—layered with buttery graham crust, rich chocolate ice cream, and a pillowy marshmallow topping.


Ingredients

  • 2 cups graham cracker crumbs
  • 1/2 cup salted butter, melted
  • 2 tbsp brown sugar
  • 1.5 quarts chocolate ice cream (softened)
  • 7 oz marshmallow fluff
  • 8 oz cream cheese, softened
  • 2 cups whipped topping
  • 1 cup mini marshmallows

Instructions

  1. Line a 9×13” pan with parchment. Mix graham crumbs, melted butter, and sugar. Press into pan. Freeze 10 min.
  2. Spread softened chocolate ice cream over crust. Freeze 2 hours until firm.
  3. Beat marshmallow fluff with cream cheese. Fold in whipped topping. Spread over ice cream. Top with mini marshmallows.
  4. Toast marshmallows with a kitchen torch or broil briefly. Freeze 4 hours or overnight.
  5. Let bars sit 5–10 min before slicing. Serve chilled.
