Instructions
- In a mixing bowl, combine vanilla wafer crumbs, cream cheese, powdered sugar, cinnamon, and vanilla extract until well blended.
- Roll the mixture into small balls and place them on a baking sheet lined with parchment paper.
- Chill the truffles in the refrigerator for about 30 minutes.
- In a microwave-safe bowl, melt the white chocolate chips and coconut oil together until smooth.
- Dip each chilled truffle into the melted chocolate, allowing excess to drip off.
- Roll the chocolate-coated truffles in a mixture of cinnamon and sugar.
- Place the coated truffles back on the baking sheet and let them set until the chocolate hardens.
