  • 1 large egg yolk
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon almond extract
  • 1/4 teaspoon salt
  • 1/2 cup raspberry jam

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a mixing bowl, cream together the softened butter and powdered sugar until light and fluffy.
  3. Add the egg yolk, vanilla extract, and almond extract, mixing until well combined.
  4. Gradually add the flour and salt, mixing until a dough forms.
  5. Chill the dough for at least 30 minutes.
  6. Roll out the dough on a floured surface to about 1/4 inch thick.
  7. Cut out shapes using cookie cutters, making sure to cut out the center of half of the cookies.
  8. Place the cookies on a baking sheet lined with parchment paper and bake for 10-12 minutes or until lightly golden.
  9. Let the cookies cool completely before spreading raspberry jam on the solid cookies and topping with the cut-out cookies.
