Ingredients

- 2 cups all-purpose flour
- 1/2 cup powdered sugar
- 1/2 cup unsalted butter, softened
- 1 large egg yolk
- 1 teaspoon vanilla extract
- 1/2 teaspoon almond extract
- 1/4 teaspoon salt
- 1/2 cup raspberry jam
Instructions
- Preheat your oven to 350°F (175°C).
- In a mixing bowl, cream together the softened butter and powdered sugar until light and fluffy.
- Add the egg yolk, vanilla extract, and almond extract, mixing until well combined.
- Gradually add the flour and salt, mixing until a dough forms.
- Chill the dough for at least 30 minutes.
- Roll out the dough on a floured surface to about 1/4 inch thick.
- Cut out shapes using cookie cutters, making sure to cut out the center of half of the cookies.
- Place the cookies on a baking sheet lined with parchment paper and bake for 10-12 minutes or until lightly golden.
- Let the cookies cool completely before spreading raspberry jam on the solid cookies and topping with the cut-out cookies.
Notes
- For a different flavor, try using apricot or strawberry jam instead of raspberry.
- These cookies can be stored in an airtight container for up to a week.
