Ingredients

- 1 cup long-grain white rice
- 1 pound ground beef or pork
- 1/2 cup onion, chopped
- 1/2 cup green bell pepper, chopped
- 1/2 cup celery, chopped
- 2 cloves garlic, minced
- 2 cups chicken broth
- 1 tablespoon Cajun seasoning
- Salt and pepper to taste
- 2 green onions, sliced (for garnish)
Instructions
- In a large skillet, brown the ground meat over medium heat until fully cooked.
- Add the chopped onion, bell pepper, celery, and garlic to the skillet and sauté until the vegetables are tender.
- Stir in the Cajun seasoning, salt, and pepper.
- Add the rice to the skillet and mix well with the meat and vegetables.
- Pour in the chicken broth and bring to a boil.
- Reduce heat to low, cover, and simmer for about 20 minutes or until the rice is cooked and liquid is absorbed.
- Fluff the rice with a fork and garnish with sliced green onions before serving.
Notes
- For a spicier version, add diced jalapeños or hot sauce.
- This dish can be made ahead of time and reheated.
- Serve with cornbread for a complete Southern meal.
