A delicious and creamy pasta dish featuring spinach and sun-dried tomatoes, perfect for a spring dinner.

- 8 oz spaghetti
- 2 cups fresh spinach
- 1/2 cup sun-dried tomatoes, chopped
- 1 cup heavy cream
- 1/2 cup grated Parmesan cheese
- 2 cloves garlic, minced
- 2 tbsp olive oil
- Salt and pepper to taste
Instructions
- Cook the spaghetti according to package instructions until al dente.
- In a large skillet, heat olive oil over medium heat and sauté garlic until fragrant.
- Add the sun-dried tomatoes and cook for 2-3 minutes.
- Stir in the heavy cream and bring to a simmer.
- Add the spinach and cook until wilted.
- Mix in the Parmesan cheese and season with salt and pepper.
- Combine the cooked spaghetti with the sauce and toss to coat.
- Serve warm and enjoy!
