- 1/4 cup powdered sugar
- 1 teaspoon vanilla extract (for filling)
Instructions
- Preheat your oven to 350°F (175°C) and line a 15×10 inch jelly roll pan with parchment paper.
- In a bowl, whisk together the flour, baking powder, baking soda, cinnamon, nutmeg, ginger, and salt.
- In another bowl, beat the eggs and sugar until light and fluffy. Add the oil and vanilla extract, mixing well.
- Gradually add the dry ingredients to the wet mixture, stirring until just combined. Fold in the grated carrots and walnuts if using.
- Spread the batter evenly in the prepared pan and bake for 15-20 minutes or until a toothpick comes out clean.
- Once baked, remove from the oven and let it cool for a few minutes. Then, carefully roll the cake with the parchment paper from the short end and let it cool completely.
- For the filling, beat the cream cheese, powdered sugar, and vanilla extract until smooth.
- Unroll the cooled cake, spread the cream cheese filling evenly, and then roll it back up without the parchment paper.
- Wrap the cake roll in plastic wrap and refrigerate for at least 1 hour before serving.
