  • 1 cup grated carrots
  • 1/2 cup chopped walnuts (optional)
  • 1 cup cream cheese, softened
  • 1/4 cup powdered sugar
  • 1 teaspoon vanilla extract (for filling)

Instructions

  1. Preheat your oven to 350°F (175°C) and line a 15×10 inch jelly roll pan with parchment paper.
  2. In a bowl, whisk together the flour, baking powder, baking soda, cinnamon, nutmeg, ginger, and salt.
  3. In another bowl, beat the eggs and sugar until light and fluffy. Add the oil and vanilla extract, mixing well.
  4. Gradually add the dry ingredients to the wet mixture, stirring until just combined. Fold in the grated carrots and walnuts if using.
  5. Spread the batter evenly in the prepared pan and bake for 15-20 minutes or until a toothpick comes out clean.
  6. Once baked, remove from the oven and let it cool for a few minutes. Then, carefully roll the cake with the parchment paper from the short end and let it cool completely.
  7. For the filling, beat the cream cheese, powdered sugar, and vanilla extract until smooth.
  8. Unroll the cooled cake, spread the cream cheese filling evenly, and then roll it back up without the parchment paper.
  9. Wrap the cake roll in plastic wrap and refrigerate for at least 1 hour before serving.
