Ingredients

- 2 chicken breasts, diced
- 1 tablespoon olive oil
- 1 teaspoon paprika
- 1 teaspoon cayenne pepper
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- Salt and pepper to taste
- 2 cups broccoli florets
- 1 red bell pepper, sliced
- 1 zucchini, sliced
- 1 cup cherry tomatoes
- 1 tablespoon balsamic vinegar
Instructions
- Preheat the oven to 400°F (200°C).
- In a bowl, mix the diced chicken with olive oil, paprika, cayenne pepper, garlic powder, onion powder, salt, and pepper.
- Spread the chicken on a baking sheet and roast for 15 minutes.
- In another bowl, toss the broccoli, red bell pepper, zucchini, and cherry tomatoes with balsamic vinegar, salt, and pepper.
- Add the vegetables to the baking sheet with the chicken and roast for an additional 20 minutes.
- Once cooked, serve the spicy chicken and roasted vegetables in bowls.
Notes
- Adjust the spice level by adding more or less cayenne pepper.
- Feel free to substitute any vegetables you prefer.
- This dish can be served over rice or quinoa for a complete meal.
