Instructions
- Preheat your oven to 400°F (200°C).
- In a large bowl, combine corn, red bell pepper, cilantro, chili powder, cumin, salt, and black pepper.
- In a separate bowl, mix mayonnaise and lime juice, then add to the corn mixture.
- Stir in the shredded cheese until well combined.
- Form small bites from the mixture and place them on a baking sheet.
