- 1 tbsp lime juice
- Fresh cilantro, chopped (for garnish)
Instructions
- Dice the potatoes into 1-inch cubes.
- Heat vegetable oil in a large skillet over medium-high heat.
- Add potatoes and cook, stirring occasionally, until tender and golden brown (15-20 min).
- Incorporate the salt, smoked paprika, chili powder, cumin, and cayenne pepper in a small bowl, stirring to combine.
- Add the remaining vegetable oil and minced garlic to the skillet; cook for 1 min until fragrant.
- Sprinkle the spice mixture over the potatoes; toss to coat and cook for an additional 2-3 min.
- Remove from heat, stirring in lime juice until well mixed.
- Garnish with fresh cilantro and serve warm.
Notes
Adjust spice levels according to your preference. For a variation, you can add cheese, but it might stray from the traditional recipe.
