- 1 can kidney beans (drained and rinsed)
- 1 can black beans (drained and rinsed)
- 1 onion (diced)
- 2 cloves garlic (minced)
- 1 bell pepper (diced)
- 2 cups beef broth
- 1 can diced tomatoes (with juices)
- 2 tablespoons chili powder
- 1 tablespoon smoked paprika
- 1 teaspoon cumin
- 1 teaspoon cayenne pepper (optional for extra heat)
- Salt and pepper to taste
- Olive oil for cooking
Instructions
- Heat olive oil in a large pot over medium-high heat.
- Add the cubed steak and sear until browned on all sides. Remove and set aside.
- In the same pot, add onions, garlic, and bell pepper. Sauté until softened.
- Stir in tomatoes, beans, beef broth, chili powder, smoked paprika, cumin, cayenne pepper, and the seared steak.
- Bring to a boil, then reduce heat to low and simmer for 30 minutes, stirring occasionally.
- Season with salt and pepper to taste.
- Serve hot in bowls, garnished with your favorite toppings such as cheese, sour cream, or jalapeños.
