- 12 jumbo pasta shells
- 1 cup fresh spinach, chopped
- 1 cup mushrooms, sliced
- 1 cup cooked shrimp, chopped
- 1 cup ricotta cheese
- 1/2 cup mozzarella cheese, shredded
- 1/4 cup Parmesan cheese, grated
- 2 cloves garlic, minced
- 1 tablespoon olive oil
- Salt and pepper to taste
Instructions
- Preheat the oven to 375°F (190°C).
- Cook the jumbo pasta shells according to package instructions; drain and set aside.
- In a skillet, heat olive oil over medium heat and sauté garlic until fragrant.
- Add mushrooms and cook until softened, then stir in spinach and cook until wilted.
- In a bowl, combine the cooked shrimp, ricotta cheese, sautéed vegetables, salt, and pepper.
- Stuff each pasta shell with the shrimp and cheese mixture.
- Place the stuffed shells in a baking dish and sprinkle with mozzarella and Parmesan cheese.
- Bake for 20-25 minutes until the cheese is bubbly and golden.
- Let cool for a few minutes before serving.
Notes
- Feel free to add herbs like basil or parsley for extra flavor.
- Can substitute shrimp with chicken or tofu for a different protein.
