Description

A flavorful recipe combining spinach, mushrooms, and shrimp in delicious pasta shells.


Ingredients

  • 12 jumbo pasta shells
  • 1 cup fresh spinach, chopped
  • 1 cup mushrooms, sliced
  • 1 cup cooked shrimp, chopped
  • 1 cup ricotta cheese
  • 1/2 cup mozzarella cheese, shredded
  • 1/4 cup Parmesan cheese, grated
  • 2 cloves garlic, minced
  • 1 tablespoon olive oil
  • Salt and pepper to taste

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. Cook the jumbo pasta shells according to package instructions; drain and set aside.
  3. In a skillet, heat olive oil over medium heat and sauté garlic until fragrant.
  4. Add mushrooms and cook until softened, then stir in spinach and cook until wilted.
  5. In a bowl, combine the cooked shrimp, ricotta cheese, sautéed vegetables, salt, and pepper.
  6. Stuff each pasta shell with the shrimp and cheese mixture.
  7. Place the stuffed shells in a baking dish and sprinkle with mozzarella and Parmesan cheese.
  8. Bake for 20-25 minutes until the cheese is bubbly and golden.
  9. Let cool for a few minutes before serving.

  • Feel free to add herbs like basil or parsley for extra flavor.
