Ingredients

  • 1 package of puff pastry (thawed)
  • 2 cups fresh spinach (chopped)
  • 1 cup ricotta cheese
  • 1/2 cup grated Parmesan cheese
  • 1 egg (beaten)
  • Salt and pepper to taste
  • 1 tablespoon olive oil

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. In a skillet, heat olive oil over medium heat and sauté the chopped spinach until wilted.
  3. In a bowl, mix the sautéed spinach, ricotta cheese, Parmesan cheese, beaten egg, salt, and pepper.
  4. Roll out the puff pastry on a floured surface and cut into tree shapes.
  5. Place a spoonful of the spinach mixture on each pastry tree.
  6. Fold the edges of the pastry over the filling to create a tree shape.
  7. Brush the tops with beaten egg for a golden finish.
  8. Bake in the preheated oven for 15-20 minutes or until golden brown.
  9. Serve warm and enjoy!
