Ingredients

- 1 package of puff pastry (thawed)
- 2 cups fresh spinach (chopped)
- 1 cup ricotta cheese
- 1/2 cup grated Parmesan cheese
- 1 egg (beaten)
- Salt and pepper to taste
- 1 tablespoon olive oil
Instructions
- Preheat the oven to 400°F (200°C).
- In a skillet, heat olive oil over medium heat and sauté the chopped spinach until wilted.
- In a bowl, mix the sautéed spinach, ricotta cheese, Parmesan cheese, beaten egg, salt, and pepper.
- Roll out the puff pastry on a floured surface and cut into tree shapes.
- Place a spoonful of the spinach mixture on each pastry tree.
- Fold the edges of the pastry over the filling to create a tree shape.
- Brush the tops with beaten egg for a golden finish.
- Bake in the preheated oven for 15-20 minutes or until golden brown.
- Serve warm and enjoy!

- Feel free to add other herbs or spices to the filling for extra flavor.
- These can be made ahead of time and frozen before baking.
