Description

A refreshing and healthy salad featuring couscous, fresh peas, and a zesty basil vinaigrette.


Ingredients

  • 1 cup couscous
  • 1 cup fresh peas
  • 1/2 cup feta cheese, crumbled
  • 1/4 cup fresh basil, chopped
  • 1/4 cup olive oil
  • 2 tablespoons lemon juice
  • Salt and pepper to taste


Instructions

  1. Cook the couscous according to package instructions and let it cool.
  2. In a large bowl, combine the cooked couscous, fresh peas, and crumbled feta cheese.
  3. In a small bowl, whisk together the olive oil, lemon juice, chopped basil, salt, and pepper to create the vinaigrette.
  4. Pour the vinaigrette over the couscous mixture and toss to combine.
