Ingredients

  • 200g dark chocolate
  • 150g unsalted butter
  • 150g sugar
  • 3 large eggs
  • 100g all-purpose flour
  • 1 tsp vanilla extract
  • 200g pomegranate seeds

Instructions

  1. Preheat the oven to 180°C (350°F) and grease a round cake tin.
  2. Melt the dark chocolate and butter together in a heatproof bowl over simmering water.
  3. In a separate bowl, whisk together the sugar and eggs until pale and fluffy.
  4. Fold the melted chocolate mixture into the egg mixture.
  5. Sift in the flour and gently fold until just combined.
  6. Stir in the vanilla extract and half of the pomegranate seeds.
  7. Pour the batter into the prepared cake tin and smooth the top.
  8. Bake for 25-30 minutes or until a skewer inserted comes out with a few moist crumbs.
  9. Allow to cool in the tin for 10 minutes before transferring to a wire rack.
  10. Once cooled, top with the remaining pomegranate seeds before serving.

  • For a richer flavor, use high-quality dark chocolate.
  • Serve with whipped cream or ice cream for added indulgence.
