Description

Delicious and healthy cookies perfect for celebrating St. Patrick’s Day.


Ingredients

  • 1 cup almond flour
  • 1/2 cup rolled oats
  • 1/4 cup honey or maple syrup
  • 1/4 cup coconut oil, melted
  • 1 egg
  • 1 tsp vanilla extract
  • 1/2 tsp baking soda
  • 1/4 tsp salt
  • Green food coloring (optional)
  • 1/2 cup dark chocolate chips (optional)

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. In a large bowl, mix together the almond flour, rolled oats, baking soda, and salt.
  3. In another bowl, whisk together the honey (or maple syrup), melted coconut oil, egg, and vanilla extract.
  4. Combine the wet and dry ingredients, mixing until well combined. Add green food coloring if desired.
  5. Fold in dark chocolate chips if using.
  6. Drop spoonfuls of dough onto a baking sheet lined with parchment paper.
  7. Bake for 10-12 minutes or until the edges are golden.
  8. Let cool on the baking sheet for a few minutes before transferring to a wire rack to cool completely.
