Ingredients

- 1 cup almond flour
- 1/2 cup rolled oats
- 1/4 cup honey or maple syrup
- 1/4 cup coconut oil, melted
- 1 egg
- 1 tsp vanilla extract
- 1/2 tsp baking soda
- 1/4 tsp salt
- Green food coloring (optional)
- 1/2 cup dark chocolate chips (optional)
Instructions
- Preheat the oven to 350°F (175°C).
- In a large bowl, mix together the almond flour, rolled oats, baking soda, and salt.
- In another bowl, whisk together the honey (or maple syrup), melted coconut oil, egg, and vanilla extract.
- Combine the wet and dry ingredients, mixing until well combined. Add green food coloring if desired.
- Fold in dark chocolate chips if using.
- Drop spoonfuls of dough onto a baking sheet lined with parchment paper.
- Bake for 10-12 minutes or until the edges are golden.
- Let cool on the baking sheet for a few minutes before transferring to a wire rack to cool completely.
Notes
- Store cookies in an airtight container for up to a week.
- Feel free to add nuts or dried fruits for extra flavor.
