Delicious mini chocolate pies perfect for celebrating St. Patrick’s Day.
Ingredients

- 1 pre-made pie crust
- 1 cup chocolate chips
- 1/2 cup heavy cream
- 1/4 cup powdered sugar
- 1 teaspoon vanilla extract
- Green food coloring (optional)
- Whipped cream for topping
Instructions
- Preheat the oven to 350°F (175°C).
- Roll out the pie crust and cut into small circles to fit into a mini muffin tin.
- Press the pie crust circles into the muffin tin and bake for 10-12 minutes until golden.
- In a saucepan, heat the heavy cream until it begins to simmer.
- Remove from heat and add the chocolate chips, stirring until melted and smooth.
- Stir in the powdered sugar and vanilla extract. Add green food coloring if desired.
- Pour the chocolate mixture into the baked pie crusts and refrigerate until set, about 2 hours.
- Top with whipped cream before serving.
Notes
- For a festive touch, use shamrock-shaped cookie cutters for the pie crust.
- These pies can be made a day in advance.
- Store leftovers in the refrigerator.
