Delicious mint brownies perfect for celebrating St. Patrick’s Day.


Ingredients

  • 1 cup unsalted butter
  • 2 cups granulated sugar
  • 4 large eggs
  • 1 teaspoon vanilla extract
  • 1 cup all-purpose flour
  • 1 cup unsweetened cocoa powder
  • 1/2 teaspoon salt
  • 1/2 teaspoon baking powder
  • 1 cup mint chocolate chips
  • Green food coloring (optional)
  • 1 cup powdered sugar
  • 2 tablespoons milk
  • 1/2 teaspoon peppermint extract

Instructions

  1. Preheat the oven to 350°F (175°C) and grease a 9×13 inch baking pan.
  2. In a large bowl, melt the butter and mix in the granulated sugar until well combined.
  3. Add the eggs one at a time, mixing well after each addition, then stir in the vanilla extract.
  4. In another bowl, whisk together the flour, cocoa powder, salt, and baking powder.
  5. Gradually add the dry ingredients to the wet ingredients, mixing until just combined.
  6. Fold in the mint chocolate chips and green food coloring if using.
  7. Pour the batter into the prepared baking pan and spread evenly.
  8. Bake for 25-30 minutes or until a toothpick inserted in the center comes out clean.
  9. While the brownies are baking, prepare the mint frosting by mixing the powdered sugar, milk, and peppermint extract until smooth.
  10. Once the brownies are cool, spread the mint frosting on top and cut into squares.

Notes

  • For a stronger mint flavor, increase the amount of peppermint extract.
  • These brownies can be stored in an airtight container for up to a week.
  • Decorate with green sprinkles for a festive touch.
