- 1 lb steak (sirloin or ribeye), cut into 1-inch cubes
- 2 tablespoons olive oil
- Salt and pepper to taste
- 1 cup fresh parsley, chopped
- 1/2 cup olive oil (for chimichurri)
- 2 tablespoons red wine vinegar
- 3 cloves garlic, minced
- 1 teaspoon red pepper flakes
- Salt to taste
Instructions
- Preheat the grill to medium-high heat.
- In a bowl, toss the steak cubes with olive oil, salt, and pepper.
- Thread the steak onto skewers.
- Grill the skewers for about 8-10 minutes, turning occasionally, until desired doneness.
- While the steak is grilling, prepare the chimichurri sauce by combining parsley, olive oil, red wine vinegar, garlic, red pepper flakes, and salt in a bowl.
- Once the steak skewers are done, remove them from the grill and let them rest for a few minutes.
- Serve the skewers with chimichurri sauce drizzled on top or on the side.
Notes
- For extra flavor, marinate the steak in the olive oil and seasonings for a few hours before grilling.
- Chimichurri sauce can be made ahead of time and stored in the refrigerator for up to a week.
