Ingredients

  • 1 lb steak (sirloin or ribeye), cut into 1-inch cubes
  • 2 tablespoons olive oil
  • Salt and pepper to taste
  • 1 cup fresh parsley, chopped
  • 1/2 cup olive oil (for chimichurri)
  • 2 tablespoons red wine vinegar
  • 3 cloves garlic, minced
  • 1 teaspoon red pepper flakes
  • Salt to taste

Instructions

  1. Preheat the grill to medium-high heat.
  2. In a bowl, toss the steak cubes with olive oil, salt, and pepper.
  3. Thread the steak onto skewers.
  4. Grill the skewers for about 8-10 minutes, turning occasionally, until desired doneness.
  5. While the steak is grilling, prepare the chimichurri sauce by combining parsley, olive oil, red wine vinegar, garlic, red pepper flakes, and salt in a bowl.
  6. Once the steak skewers are done, remove them from the grill and let them rest for a few minutes.
  7. Serve the skewers with chimichurri sauce drizzled on top or on the side.

Notes

  • For extra flavor, marinate the steak in the olive oil and seasonings for a few hours before grilling.
