- 2 large flour tortillas
- 1 cup cream cheese, softened
- 1/2 cup powdered sugar
- 1 teaspoon vanilla extract
- 1 cup fresh strawberries, sliced
- 1/4 cup graham cracker crumbs
- Butter, for cooking
Instructions
- In a mixing bowl, combine the softened cream cheese, powdered sugar, and vanilla extract until smooth.
- Spread the cream cheese mixture evenly over one side of each tortilla.
- Layer the sliced strawberries on top of the cream cheese on one tortilla.
- Sprinkle graham cracker crumbs over the strawberries.
- Top with the second tortilla, cream cheese side down.
- Heat a skillet over medium heat and add a little butter.
- Carefully place the quesadilla in the skillet and cook for 2-3 minutes on each side, or until golden brown and crispy.
- Remove from the skillet and let cool slightly before slicing into wedges.
- Serve warm, optionally with additional strawberries or whipped cream.
Notes
- For a richer flavor, use mascarpone cheese instead of cream cheese.
- Feel free to add other fruits like blueberries or raspberries.
- Can be made ahead and reheated in the oven for a few minutes.
