Ingredients

- 1 1/2 cups all-purpose flour
- 1/2 cup sugar
- 1 tablespoon baking powder
- 1/2 teaspoon salt
- 1/2 cup milk
- 1/4 cup vegetable oil
- 1 large egg
- 1 cup fresh strawberries, chopped
- 4 oz cream cheese, softened
- 1/4 cup buttery crumb mixture (for topping)
Instructions
- Preheat the oven to 400°F (200°C) and line a muffin tin with paper liners.
- Combine flour, sugar, baking powder, and salt in a large mixing bowl.
- Mix milk, vegetable oil, and egg in another bowl until well combined.
- Pour the wet ingredients into the dry ingredients and stir until just combined.
- Gently fold in chopped strawberries.
- Mix softened cream cheese in a separate bowl until smooth.
- Fill each muffin cup halfway with batter, add a spoonful of cream cheese, and then top with more batter until almost full.
- Sprinkle the crumb mixture on top of each muffin.
- Bake for 18-20 minutes or until a toothpick comes out clean.
- Allow cooling slightly before serving.
