Description

Ingredients

  • 12 Strawberries
  • 1 pint Heavy Whipping Cream
  • 8 oz. Cream Cheese (softened to room temp)
  • 1/4 cup Powdered Sugar (or more to taste)
  • 1/4 tsp Vanilla
  • 1 tbsp Lemon Zest
  • 8-10 slices White Bread


Instructions

  1. Wash the strawberries and hull them, then thoroughly dry.
  2. Whip the cream cheese on high until light and fluffy (2-3 minutes).
  3. Add the heavy cream, vanilla, and sugar and continue whipping on high until stiff peaks form, scraping down the sides as needed.
  4. Stir in lemon zest to combine.
  5. Spread a layer of cream mixture on each piece of bread.
  6. Arrange the strawberries on half of the bread slices, aligning the center berries for visual appeal.
  7. Add more strawberries to fill in the sides, ensuring cream fills the gaps.
  8. Top with more cream mixture, ensuring generous coverage.
  9. Place a slice of bread on top and gently press together.
  10. Score a line in a diagonal direction that aligns with the arranged center fruit.
  11. Wrap each sandwich tightly in plastic wrap and compress with a heavy item for 2 hours to set.
  12. Remove the plastic wrap and with a sharp serrated knife, start by cutting off the edges first.
  13. Finally, make your diagonal cut along the scored line.

Notes

For sugar reduction, consider using stevia, monk fruit, or allulose instead of powdered sugar.
