Description

Ingredients

  • 1 1/2 cups All-Purpose Flour (or gluten-free flour)
  • 2 cups Old-Fashioned Oats (do not substitute with quick oats)
  • 1/2 teaspoon Baking Soda
  • 1/2 teaspoon Ground Cinnamon (optional)
  • 1/4 teaspoon Salt (or sea salt)
  • 1/2 cup Freeze-Dried Strawberries


Instructions

  1. Preheat your oven to 350°F (175°C) and prepare baking sheets by lining them with parchment paper.
  2. Cream together the unsalted butter, brown sugar, and granulated sugar until fluffy and well combined.
  3. Add the large egg and vanilla extract, mixing until fully incorporated.
  4. Pour in the molasses and mix until the mixture is smooth.
  5. Whisk together the all-purpose flour, baking soda, ground cinnamon (if using), and salt in a separate bowl.
  6. Incorporate the dry ingredients into the wet mixture, mixing just until combined.
  7. Fold in the old-fashioned oats and freeze-dried strawberries into the dough gently.
  8. Scoop tablespoon-sized balls of dough onto the prepared baking sheets, leaving space between each cookie.
  9. Bake in the preheated oven for 12-15 minutes or until edges are lightly golden.
  10. Remove the cookies from the oven and let them cool on the sheet for 5 minutes before transferring to a wire rack.
  11. Allow the cookies to cool completely before icing.
  12. Prepare the icing using additional freeze-dried strawberries, blending them into a powder and mixing with a bit of water to achieve desired consistency. Drizzle the icing over cooled cookies.
