  • 4 cups powdered sugar
  • 1 teaspoon vanilla extract (for frosting)

Instructions

  1. Preheat the oven to 350°F (175°C) and line a cupcake pan with liners.
  2. In a large bowl, whisk together the flour, sugar, baking soda, cocoa powder, and salt.
  3. In another bowl, mix the vegetable oil, buttermilk, eggs, food coloring, and vanilla extract until well combined.
  4. Gradually add the wet ingredients to the dry ingredients, mixing until just combined.
  5. Fold in the pureed strawberries gently into the batter.
  6. Fill the cupcake liners about 2/3 full with the batter.
  7. Bake for 18-20 minutes or until a toothpick inserted comes out clean.
  8. Let the cupcakes cool completely before frosting.
  9. For the frosting, beat together the cream cheese and butter until smooth, then gradually add the powdered sugar and vanilla extract until fluffy.
  10. Frost the cooled cupcakes with the cream cheese frosting and garnish with fresh strawberries if desired.
