Instructions
- Preheat the oven to 350°F (175°C) and line a cupcake pan with liners.
- In a large bowl, whisk together the flour, sugar, baking soda, cocoa powder, and salt.
- In another bowl, mix the vegetable oil, buttermilk, eggs, food coloring, and vanilla extract until well combined.
- Gradually add the wet ingredients to the dry ingredients, mixing until just combined.
- Fold in the pureed strawberries gently into the batter.
- Fill the cupcake liners about 2/3 full with the batter.
- Bake for 18-20 minutes or until a toothpick inserted comes out clean.
- Let the cupcakes cool completely before frosting.
- For the frosting, beat together the cream cheese and butter until smooth, then gradually add the powdered sugar and vanilla extract until fluffy.
- Frost the cooled cupcakes with the cream cheese frosting and garnish with fresh strawberries if desired.
