- 1 large egg

- 1 cup fresh strawberries, diced
- Zest of 1 lemon
- 1 tablespoon lemon juice
Instructions
- Preheat your oven to 400°F (200°C).
- Whisk together the flour, sugar, baking powder, and salt in a large bowl.
- Cut in the cold butter until the mixture resembles coarse crumbs.
- Mix together the cream, egg, vanilla, lemon zest, and lemon juice in a separate bowl.
- Gradually add the wet ingredients to the dry ingredients, stirring until just combined.
- Fold in the diced strawberries gently.
- Turn the dough out onto a floured surface and knead gently a few times.
- Pat into a circle about 1 inch thick and cut into wedges.
- Place on a baking sheet lined with parchment paper and bake for 15-20 minutes or until golden brown.
