A deliciously healthy treat made with fresh strawberries and a crunchy crumble topping.


Ingredients

  • 2 cups rolled oats
  • 1 cup all-purpose flour
  • 1/2 cup brown sugar
  • 1/2 cup unsalted butter, melted
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon salt
  • 2 cups fresh strawberries, hulled and sliced
  • 1 tablespoon lemon juice
  • 1 tablespoon cornstarch

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. In a large bowl, combine rolled oats, flour, brown sugar, melted butter, vanilla extract, and salt.
  3. Press half of the oat mixture into the bottom of a greased 9×9 inch baking dish.
  4. In another bowl, mix sliced strawberries with lemon juice and cornstarch.
  5. Spread the strawberry mixture over the oat base.
  6. Sprinkle the remaining oat mixture on top of the strawberries.
  7. Bake for 30-35 minutes or until the top is golden brown.
  8. Allow to cool before cutting into bars.

Notes

  • For a vegan option, substitute butter with coconut oil.
  • Feel free to add nuts or seeds for extra crunch.
