Description

Delightful crumb bars featuring a sweet-tart strawberry and rhubarb filling topped with a crumbly oat topping.


Ingredients

  • 2 cups chopped strawberries
  • 2 cups chopped rhubarb
  • 3/4 cup granulated sugar
  • 2 tbsp cornstarch
  • 1 tbsp lemon juice
  • 2 1/2 cups all-purpose flour
  • 1 cup rolled oats
  • 1 cup brown sugar
  • 1 tsp ground cinnamon
  • 1 tsp baking powder
  • 1/4 tsp salt
  • 1 cup unsalted butter, cold and cubed


Instructions

  1. Preheat oven to 350°F and prepare a 9×13 baking pan.
  2. Mix strawberries, rhubarb, granulated sugar, cornstarch, and lemon juice in a bowl and set aside.
  3. Combine flour, oats, brown sugar, cinnamon, baking powder, and salt in a separate bowl.
  4. Cut in the butter until the mixture resembles coarse crumbs.
  5. Press two-thirds of the crumb mixture into the pan to form the crust.
  6. Spread the fruit filling evenly over the crust.
  7. Sprinkle remaining crumb mixture on top and bake for 40–45 minutes.
  8. Let cool completely before slicing into bars.

Notes

Using cold butter will help achieve a crumbly texture, and cooling the bars completely before cutting is crucial.
