Description

Ingredients

  • 2 cups cooked rice
  • 1 lb chicken breast, diced
  • 2 ears of corn, kernels removed
  • 1 cup black beans, drained and rinsed
  • 1 red bell pepper, diced
  • 1 avocado, sliced
  • 1/2 cup cilantro, chopped
  • Juice of 1 lime
  • Salt and pepper to taste
  • Olive oil for cooking


Instructions

  1. In a large skillet, heat olive oil over medium heat. Add diced chicken and season with salt and pepper. Cook until the chicken is browned and cooked through, about 6-7 minutes.
  2. Add the corn and red bell pepper to the skillet, cooking for an additional 3-4 minutes until the vegetables are softened.
  3. In a bowl, combine cooked rice, black beans, lime juice, and cilantro. Mix well.
  4. To serve, layer the rice mixture in bowls, top with the chicken and corn mixture, avocado slices, and additional cilantro if desired.
