Ingredients

- 2 cups cooked rice
- 1 lb chicken breast, diced
- 2 ears of corn, kernels removed
- 1 cup black beans, drained and rinsed
- 1 red bell pepper, diced
- 1 avocado, sliced
- 1/2 cup cilantro, chopped
- Juice of 1 lime
- Salt and pepper to taste
- Olive oil for cooking
Instructions
- In a large skillet, heat olive oil over medium heat. Add diced chicken and season with salt and pepper. Cook until the chicken is browned and cooked through, about 6-7 minutes.
- Add the corn and red bell pepper to the skillet, cooking for an additional 3-4 minutes until the vegetables are softened.
- In a bowl, combine cooked rice, black beans, lime juice, and cilantro. Mix well.
- To serve, layer the rice mixture in bowls, top with the chicken and corn mixture, avocado slices, and additional cilantro if desired.
