A delightful fusion of Mexican street corn and classic American smash burgers, served in tacos.
Ingredients

- 1.5 lbs ground hamburger (80/20)
- 6 flour taco-sized tortillas
- Salt and pepper to taste
- 3/4 cup cilantro leaves (large stems removed)
- 1/2 cup pickled jalapeños
- 2 tablespoons juice from pickled jalapeños
- 3/4 cup mayonnaise
- 3/4 cup sour cream
- 1 heaping tablespoon dry ranch seasoning (Hidden Valley or similar)
- 1/2 teaspoon garlic powder
- 1/2 teaspoon salt
- 1 tablespoon lime juice, fresh
- 1/4 cup buttermilk (optional)
- 5-6 ears of corn (husked and removed from the cob)
- 1/3 cup mayonnaise
- 1 garlic clove, minced
- 1 lime, juiced and zested
- 1/3 cup sliced scallions
- 1/3 cup grated cotija cheese
- 1/4 cup cilantro, minced (large stems removed)
- 1 jalapeño, diced
- 1/2-1 tsp chili powder
- 1/2-1 tsp Tajin
- 1/4 tsp salt
- 2 tablespoons olive oil
Instructions
- Prepare the Street Corn Topping: In a bowl, combine the corn, 1/3 cup mayonnaise, garlic clove, lime juice, and lime zest. Mix thoroughly.
- Fold in the sliced scallions, grated cotija cheese, minced cilantro, and diced jalapeño. Season with chili powder, Tajin, and salt. Stir until well combined.
- Make the Creamy Jalapeno Sauce: In a separate bowl, whisk together 3/4 cup mayonnaise, 3/4 cup sour cream, juice from pickled jalapeños, ranch seasoning, garlic powder, salt, lime juice, and buttermilk if using. Mix until smooth.
- Cook the Smash Burgers: Preheat a skillet over medium-high heat. Divide the ground hamburger into 6 equal portions, and shape each into a loose ball.
- Place each ball on the skillet, season with salt and pepper, and immediately smash down with a spatula. Cook for about 3 minutes per side until a crust forms.
- Assemble the tacos: Warm each tortilla briefly in the skillet, then layer the smashed burger, spread a generous amount of the creamy jalapeño sauce, and finish with a scoop of the street corn topping.
Notes
For a spicier flavor, adjust the jalapeños and chili powder to your taste. Serve immediately for the best experience.
