Ingredients

  • 1 cup spinach, chopped
  • 1 cup mushrooms, diced
  • 1/2 cup cream cheese, softened
  • 1/2 cup grated Parmesan cheese
  • 2 cloves garlic, minced
  • Salt and pepper to taste
  • Olive oil for cooking

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. In a skillet, heat olive oil over medium heat and sauté garlic, mushrooms, and spinach until soft.
  3. In a bowl, mix the sautéed vegetables with cream cheese and Parmesan cheese. Season with salt and pepper.
  4. Lay the flank steak flat and spread the filling evenly over the surface.
  5. Roll the flank steak tightly and secure it with kitchen twine.
  6. Heat more olive oil in the skillet and sear the rolled steak on all sides until browned.
  7. Transfer the steak to the oven and bake for 25-30 minutes, or until the internal temperature reaches 145°F (63°C).
  8. Let it rest for 10 minutes before slicing and serving.
