- 1 flank steak (about 2 pounds)
- 1 cup spinach, chopped
- 1 cup mushrooms, diced
- 1/2 cup cream cheese, softened
- 1/2 cup grated Parmesan cheese
- 2 cloves garlic, minced
- Salt and pepper to taste
- Olive oil for cooking
Instructions
- Preheat your oven to 375°F (190°C).
- In a skillet, heat olive oil over medium heat and sauté garlic, mushrooms, and spinach until soft.
- In a bowl, mix the sautéed vegetables with cream cheese and Parmesan cheese. Season with salt and pepper.
- Lay the flank steak flat and spread the filling evenly over the surface.
- Roll the flank steak tightly and secure it with kitchen twine.
- Heat more olive oil in the skillet and sear the rolled steak on all sides until browned.
- Transfer the steak to the oven and bake for 25-30 minutes, or until the internal temperature reaches 145°F (63°C).
- Let it rest for 10 minutes before slicing and serving.
